Funky Chicken


Check out the above link to make a very easy and very yummy chicken dish in your crockpot. The picture is not mine, but comes from the site, as mine looked a bit like throw up, but believe me the taste is the opposite of that. Haha, I'm not sure I'm selling this right but it's really, really good. It's called cream cheese chicken and we're having it for dinner tonight. I'm serving it over mashed potatoes. You can see the original author of the recipe did it over pasta and I think it would make a tastey dip with chips or crackers. Another person commented on the crockpot blog that they use this chicken dish as their filling for enchiladas and then just add the salsa and cheese. Boyfriend isn't home from work yet (it's nearly 9pm and he leaves at 5:30a.m. to give you a picture of how long his day is) but this dish smells so good so I've had to do a few taste tests along the way ;) I'll give you the recipe below that I did and be sure to check out the crockpot blog for this recipe and many other awesome and easy recipes.

Cream Cheese Crockpot Chicken

2 Chicken Breasts
1 Can of Cream of Mushroom Soup
2 Tablespoons of Minced Garlic
1 Tablespoon of Sugar (yep, sugar)
Couple of cracks of pepper (you know, just chk-chk the thing a few times)
Couple of cracks of sea salt
1 Teaspoon of Celery Seed
1 Tablespoon of Onion Powder
2 Tablespoons of Italian Herbs
Half of a round container of Phili Cream Cheese, the regular, not large size, or about half a stick of Phili, the regular size

Throw the chicken breasts in to the crockpot frozen. Cover with all the dry ingredients and then dump the can of soup over it. Cook on low for 5-8 hours until you can pull the chicken apart with two forks. A half an hour before you want to serve this dish, dump in the cream cheese and make sure it melts and mixes in with the rest of the sauce. Serve it over whatever you feel like! Depending on what you like/where you live, this might be a little too hearty to eat right now in summer weather, but here in Aus it is perfect on a cold night like tonight!

  1. You'll have to let me know how it is. I've tried a few recipes from that blog. I like/love them, hubby HATES food from a slow cooker...something about the taste - I think he's either a super taster or hasn't learned to appreciate umami yet lol. Either way, the only recipe he'll eat from it is the chicken tacos I make, a waste when a slow cooker is around $60 for a cheap one.

  2. We ended up really liking this recipe. It's a good cold night dish, but was fairly rich. Pass along your chicken taco recipe when you have a chance, please!
